In the words of JP... “El Jefe, the BIG Kahuna, The Boss"
I grew up on Mexico City's food — the city's own table: the pastor, the carnitas, the salsas that bite, the taquerías that run on flavor and apologize for nothing. That's the standard every meal since has been held to.
Fast forward several years, went into banking in London, — I was good at it. But over a plate of fish and chips, I'd drift back home — Sunday afternoons, carnitas rising out of the cazo, the whole family around it. I always told people, half joking, that one day I'd have the best Mexican restaurant
Then I came home to Houston — because it's home, and because the food I grew up on still wasn't here. I'd always said I'd bring great pastor to this country and show people what they'd been missing. That's what ALTIRO is: Authentic in the food, irreverent in the brand.

Our Manifesto...
The food is traditional and has addresses — The pastor with the marinade and the flavor it's meant to have, manteca, no white rice. We don't water the recipes down and we don't take shortcuts on flavor. That part is non-negotiable.
The way we carry it is "Sin Pedir Permiso " — without asking permission. We cook for flavor over theater, say what we mean, and set the edge without waiting for anyone's approval. We don't tear anyone down and we don't apologize for ours — we do it all in, and let the food make the case.
